Today, I will share a super quick salad with you that is both easy to make and taste delicious! I don't have a name for it, so feel free to give it a name in the comment section.
This chop salad has typically all types of veggies, whatever I can find in my pantry and fridge. This recipe calls for cannelloni beans, green olives, tomatoes, cucumber and a little red onion.
What you will need to make this for two people:
2-3 tomatoes
1 cucumber
1/4 of a red onion
1 can of cannelloni beans
1/2 jar of green olives or a few pickles
For dressing:
1/4 of a lime or half of a lime depending on how juice the lime is
2-3 table spoons of olive oil
salt, paprika and turmeric to taste
I chopped cucumber slices and tomatoes into quarters, cut up olives and chopped about a quarter of red onion. I left the beans intact.
To season the salad I used some olive oil, juice of a quarter lime, salt, smoked paprika and some tumaric. If you have some fresh flat leaf parsley add that to the salad as well. Parsley has vitamin C, plus it adds a nice vibrant green color to the salad.
If you have it available you can add feta or goat cheese and swap olives with pickles.
And that's how you make the salad! Super easy, fast and affordable. The entire process will take max of 15 minutes to prepare. I typically have a piece of bread on the side.
