How was your weekend lovely Glamistas? Have you been keeping warm? The cold weather is upon us and what better way to keep warm than with a cup of hot soup.
Today, I will share with you one of my favorite soup recipes: Mushroom soup. Here is how to make a vegan mushroom soup at home. Let's get started!
Ingredients:
2 containers of shitake mushrooms (I used shitake, but I like mix and matching different types of mushrooms for more hearty flavor)
3/4 of a vegetable broth container (pick one that is low sodium)
1 cup of red wine (I had some Malbec on hand)
1 garlic clove
1/4 onion
Parsley
Salt, turmeric, paprika, crushed pepper flakes and smoked paprika.
Here are the few easy steps to make the soup:
Cut off the stems of the mushrooms. Cute the hats into slices and then into cubes. Heat a pan with some oil, add garlic, onion and fry until caramelized. Add mushrooms. Cook the mushrooms for a few minutes until they are soft and add all spices, stir. Add the wine, heat it up and finish by adding the vegetable broth. Let it cook for a few minutes and finish by adding shopped parsley.
The total cooking time for this soup is maybe a total of 15-20 minutes. Use the amount of spices to your preference. Serve with a piece of ciabatta bread.
